Ingredients

2 acorn squash

1 lb ground beef

1 chopped onion

taco seasoning*

grated cheddar cheese

chopped tomatoes

salsa

sour cream

Directions

This is so easy, healthy and surprisingly delicious!

Cut each acorn squash in half, clean out the seeds, and set cut side down in a shallow dish with a small amount of water. Microwave on high for 2 minutes or until the inside of the squash is soft. Use a fork to loosen and smash the inside of the squash.

Meanwhile, cook ground beef with onion until brown. Add taco seasoning*.

Assemble “tacos” by putting cooked ground beef in each half of the acorn squash. Top with cheese, tomato, salsa, and sour cream.

*I recommend using Wildtree brand, organic, taco seasoning or making your own. Packaged taco seasoning is full of unhealthy ingredients.
