It’s cold outside, there is a fire in the fireplace, and the house feels warm and cozy. Every season has something to look forward to—and for many during the winter months it is the feel-good comfort foods.

When it comes to comfort foods, my family has its favorites. Even now that they are all grown and raising their own families, they still enjoy it when I make their childhood favorites.

Deluxe Chicken Enchiladas

Ingredients

1 8-oz carton of sour cream
1 pkg. taco seasoning
1 4 oz can diced green chilies
1 small onion, chopped
6 chicken breasts, cooked and chopped
12 flour tortillas (corn can be used for gluten free)
1 16 oz can of enchilada sauce
cheddar and jack cheese, grated

Directions

Combine sour cream, taco seasoning, chilies and onion; mix well. Stir in chicken. Spoon some on the mixture into a flour tortilla and roll it up. Place into a 9×13 pan. Continue this process until the pan is full. Pour enchilada sauce over the enchiladas and top with cheese. Bake at 350 degrees for 30 minutes.
